Pumpkin Spice Cake

With the Holidays right upon us, I thought this recipe would be a big hit.  I don’t like to make desserts that call for mixes of any sort, but this one is well worth it.  Pumpkin Spice Cake has that wonderful something that just goes with the crisp fresh air, brown leaves crunching under your feet, and the smell of turkey in the oven.  It’s not the most beautiful thing you ever seen, but if you just close your eyes and follow your nose, you’ll be surprised:)


Pumpkin Spice Cake


1 package spice cake mix (reserve 1 cup)

½ c. butter or margarine melted

1 egg


Mix and pat in a 9×13 oven safe pan.


3 cup or 29oz. can pumpkin

2 eggs

2/3 c. milk

1 cup sugar

1½ t. cinnamon


Mix and pour over first layer.


1 cup (reserved) cake mix

¼ cup butter or margarine softened (not melted)

¼ cup sugar

1½ t. cinnamon


Mix till crumbly and scatter in ½ to 1 teaspoonfuls on top.

Bake at 350 degrees for 40-45 min.  Sets up when refrigerated.
